Passionfruit and Strawberry Pavlovas

Passionfruit and Strawberry Pavlovas

Ingredients

  • 6 egg whites
  • 450g (1lb) caster sugar
  • 300ml (½ pt) double cream, whipped
  • 1 punnet strawberries
  • 4 passionfruit, pulp removed

Directions

  1. Preheat oven to 150° C., 300° F., Gas Mark 2.
    In a bowl whisk egg whites until soft peaks stage. Gradually add sugar, beating well between each additional until mixture becomes shiny and glossy. Place meringue mixture into a piping bag and form circles of meringue onto a lined baking tray.
    Bake in an oven for 50 to 60 minutes. Cool in oven.
    To serve, sandwich with whipped cream, strawberries and passionfruit pulp.
