Filo Leeks with Light Tomato and Basil Sauce


  • 6 long leeks, medium thick
  • 200g (7 oz) filo pastry
  • Olive oil, to brush
  • 1 tsp sesame seeds, to sprinkle
  • Full quantity light tomato and basil sauce


  1. Trim and wash leaks, then cut into 3 equal lengths. Steam until tender for about 10 minutes. Cool, and then dry on kitchen paper.
    Cut filo sheets into strips as wide as the lengths of the leaks. Brushing sheets with olive oil, roll up leaks in one sheet each, leaving ends open. Brush with extra oil so that they brown well. Sprinkle with sesame seeds.
    Preheat oven to 200° C., 400° F., Gas Mark 6. Grease a baking tray.
    Place leaks on tray and bake for 20 to 25 minutes, or until filo pastry is golden and crisp.
    Meanwhile, make the tomato sauce (see link).
    To serve, arrange leak parcels on plates and spoon tomato sauce over.
