The horseradish is a perennial herb, naturalised throughout Great Britain and fields, roadsides and waste places, flowering from May to September. The plant gives easier to find as the year progresses, because the large, long and shiny leaves become a dominant feature of road banks. The roots are used as flavouring and to make sources. Pare away the brown layer using a sharp knife and grate or mince the root. Horseradish makes the eyes run - so be prepared for tears.
