Eggs Baked in Peppers

Ingredients

  • 2 red peppers, halved and de-seeded
  • 2 tbs vegetarian pesto sauce
  • 4 large eggs
  • 15g (½oz) freshly grated vegetarian Parmesan cheese

Directions

  1. Pre-heat oven to 180°C., 350°F., Gas Mark 4.

    Bring a large pan of salted water to the boil.

    Add peppers and cook for 4 mins or until just tender. Drain, rinse in cold water and place in an ovenproof dish.

    Devide pesto sauce between peppers. Crack an egg into each half of pepper. Sprinkle over chesse and bake for 20-25 mins or until the eggs are set. Serve with salad.
