Chocolate Mousse with Strawberries


  • 450g (1 lb) chocolate (containing at least 70% cocoa)
  • 250ml (½ pt) milk
  • 4 medium egg yolks
  • 50g (2 oz) soft butter
  • 100g (4 oz) dextrose (available from specialist food shops)
  • 4 medium egg whites, whisked into soft peaks


  1. Melt chocolate over a medium heat. Warm the milk and stir in the melted chocolate until well mixed. Whisk in the yolks, then the butter and dextrose. Fold in the whisked egg whites and shape immediately into oval moulds, three quarters full and leave to set for 4 hours.
    Turnout and serve with strawberries and a sweet biscuit.
