Apple and Almond Tart

Apple and Almond Tart


  • 75g (3oz) golden caster sugar
  • 1 tbsp golden caster sugar
  • 75g (3oz) butter
  • 75g (3oz) ground almond
  • 2 large eggs, beaten
  • 1 20cm (8") cooked sweet shortcrust pastry case
  • 1 red eating apple
  • 1 green eating apple
  • 2 tbsp lemon juice
  • 1 142ml pot fresh double cream or whipping cream


  1. Preheat oven to 180°C., 350°F., Gas Mark 4.

    Beat together the 75g (3oz) of golden caster sugar with the butter until creamy. Beat in the ground almonds and eggs. Spoon into the cooked pastry case and spread out evenly.

    Core and slice the apples very thinly, without peeling. Toss in lemon juice, then arrange on top of the almond mixture. Sprinkle with the 1 tbsp of golden caster sugar. Bake in preheated oven until firm - about 25 mins. Cool slightly.

    Whip the cream until it holds its shape, then serve with the apple tart.
