Vegetable Balti

Ingredients

  • 2 tbsp vegetable oil
  • 450g/1lb potatoes, peeled and cut into chunks
  • 350g/12oz cauliflower florets
  • 1 (450g) jar balti sauce
  • 300ml/½pt vegetable stock
  • 75g/3oz frozen peas
  • 1 (225g) bag baby spinach
  • naan bread to serve

Directions

  1. Heat the oil in a large pan. Add the potatoes; fry for 5 mins. Add the cauliflower; fry for a further 2-3 mins until lightly browned.

    Stir in the balti sauce and stock. Bring to the boil. Cover; simmer for 10 mins. Stir in the peas and spinach; simmer for a further 2-3 mins until vegetables are tender. Spoon into warmed bowls with naan bread. Serve immediatly.
