Light Tomato and Basil Sauce


  • 30ml (2tbs) olive oil
  • 4 garlic cloves, peeled and crushed
  • 1 x 400g can tomatoes in juice
  • Large bunch of fresh basil leaves, chopped
  • Salt
  • Black pepper, freshly ground


  1. Heat oil in a pan, add garlic and soften over a low heat without browning for about 5 minutes.
    Add tomatoes and basil, bring to simmering point and simmer very gently for 5 minutes. Season with salt and pepper, then purée in a blender.
