Halloumi Kebabs

Halloumi Kebabs


  • 1 pack Halloumi cheese
  • 1 courgette, sliced thickly
  • 1 orange pepper, de-seeded and cut into 25mm (1") pieces
  • 175g (6oz) cherry tomatoes
  • 1 garlic clove, peeled
  • handful fresh coriander, chopped
  • 45ml (3tbs) olive oil
  • Salt and freshly-ground black pepper, to taste


  1. Slice cheese into diced-sized chunks and load on to skewers with the courgette, pepper and tomatoes.

    Crush garlic and mix with coriander, oil, salt and pepper.

    Place kebabs in a roasting tin, pour over the marinade and leave for 2-3 hours, turning occasionally.

    Cook under a preheated grill or over a hot barbeque until lightly charred at the edges, brushing with any remaining marinade.
