Fried Sprouts & Chicory with Garlic & Chilli

Ingredients

  • 500g brussel sprouts,trimmed
  • 3 tbsp extra virgin olive oil
  • 1 large head of chicory, sliced into discs
  • 2 large cloves garlic, chopped
  • 1 dried, hot red chilli, crumbled
  • 1 tbsp white wine vinegar
  • Maldon salt

Directions

  1. Slice half the brussels into ½ cm thick discs and quarter the remainder. Heat the olive oil in a wide frying pan over a moderate heat. Add the sprouts and fry, stirring lazily, for about 4 mins. Now add the chicory and continue with that lazy stirring for another 6 mins or so.

    Scatter over the chopped garlic and crumbled chilli, and fry for another minute or so. Season with salt and drizzle over the vinegar. Stir once more, taste, adjust seasoning and it's ready to serve
